STUFFED PEPPERS
4 bell peppers
1/4 t. extra virgin olive oil
1 lb extra-lean ground beef
1 egg white
1/2 C. finely chopped yellow onion
2 T. canned corn
1 T. finely chopped parsley
Pinch of ground black pepper
3/4 C. tomato or spaghetti sauce
1 t. prepared horseradish
Preheat oven to 375 degrees. Cut tops off peppers. Carefully remove seeds and white membranes and discard. Lightly coat outside of peppers with oil.
In large bowl, combine beef, egg white, onion, corn, parsley, black pepper, and 1/4 cup of sauce. Stuff the mixture into the four peppers, dividing it evenly.
Pour 1/4" of water into a 9" x 13" baking pan and add peppers, cut side up. Bake for 40 minutes.
Remove peppers. Combine horseradish and remaining 1/2 C. tomato sauce and add a little of the mixture to the top of each pepper. Bake for another 10 minutes.

YUM! My six year old son would love those!
Mmmmmmmmm... those look delicious!! I love stuffed pepper, but my husband does not. Last time I made them, I used ground lamb, and I ate the leftover stuffing my itself for two or three days afterwards. One of the best things I ever made. I'm going to have to steal your recipe though... maybe for my next husband! lol

I once tried to make stuffed peppers without a recipe, just adding together stuff I'd thought would work. It failed, miserably. I will, however, be giving this recipe a try because it sounds very good. Um, horseradish, that's brilliant!

Mmmmmmm. I'm all over this...minus the horseradish. I can't stand it. But these look divine. I can almost smell them!
