I love to find easy recipes for fresh vegetables so that when I see that basket full of fresh green beans for example, I can grab a bagful knowing exactly how I'll fix them.
Fresh Green Beans Amandine
1/2 C sliced almonds
2 lbs fresh green beans
1/3 C butter
1 T lemon juice
1 t salt
1/4 t pepper
Bake sliced almonds in a shallow pan on 350 for 5 -7 minutes or until toasted. You'll know they are nearly ready when you smell toasted almonds wafting through your kitchen and you faint from joy.
Snap the ends off the green beans, then snap them in half in the middle. (This is a great job for kids.) Drop them in boiling water and cook for 4 minutes, or until fork tender. Drain the beans.
Melt the butter in a serving dish and add the almonds, beans, lemon juice, salt and pepper. Toss to coat and serve immediately.
Serves 8-10. Looks very pretty.

I'm always on the lookout for new ways to cook green beans...it's one of the few veggies that my family will eat cooked!
Green beans taste so incredibly delicious when they're fresh and the best part is that the kids like snapping the ends off of them for me!

Simple but great sounding...can't go wrong! I have some fresh beans in the fridge to use up..will give this a try.
