20 fresh large strawberries
40 caramels
3 T whipping cream
1/4 t Kosher salt
1 - 1/4 C coarsely chopped mixed nuts
Wax paper
Wash strawberries and pat dry. Caramel won't stick to wet strawberries.
Microwave caramel, whipping cream, and salt in a bowl at medium power, 3.5 minutes. Stir after each minute.
Dip each berry halfway into caramel mixture, roll in nuts, place on lightly greased wax paper. Let set for 15 minutes. Serve immediately or cover and chill up to 8 hours.
I was out of wax paper, so I used tin foil. They did stick a bit, so I recommend wax paper.
They are gorgeous little things. I think one placed to the side of a pretty cake, or a few of them surrounding scoops of vanilla bean ice cream drizzled with the left over caramel would be really impressive.
(But I just ate them right off the tray.)

Omg I think I just gained another five pounds looking at this! Simply delish! Have a wonderful Monday!
I would say that your photos are great and could easily go into a cooking book, but I am sorry for the strawberries, I so much love them natural, only with a little bit of sugar ! lol !
Dang, that looks good!
You had me at salt.
I'd skip the dipping and just use a spoon on the melted caramel.
Four weeks to native strawberry season up here!!
You ate them ALL straight off the tray? In one sitting?!

YUM! Will have to try that, maybe even my 8 year old would eat a strawberry if it was covered in caramel!
WOW that looks so good!
That looks really good, I'd probably substitute chocolate for caramel but I think it would still be delicious!
