Caramelized Cajun Chicken
4 skinned and boned chicken breasts
2 T light brown sugar
2 T Cajun seasoning (I used Kroger brand Caribbean-style Jerk seasoning)
Salt to taste
Place chicken between two sheets of plastic wrap (or in a ziplock) and pound with a rolling pin to flatten them a bit.
Stir together brown sugar and Cajun seasoning; rub mixture over chicken.
You can grill the chicken or cook it in a skillet with some oil. (I used a skillet.)
Season with salt to taste.
*I used 5 T each of brown sugar and seasoning for the rub and really coated the chicken well.
I love this recipe because it sounds and tastes more complicated than it is, and in fact it's so simple you don't need to look at the recipe. Equal parts of the brown sugar and seasoning make the rub, and that's it, super simple!

That looks really good! But I'll eat pretty much anything with brown sugar on it. Yum!
looks good- is it too spicy for a kid who doesn't like spicy or not-so-spicy?
mudmama - The Caribbean style Jerk seasoning is pretty mild. My kids gobbled this up without blinking.
As one who attempts to avoid using plastic, might I flatten chicken with sheets of parchment on either side?
