Pork Chops with Sweet Potatoes and Apples

This was a big hit with my men this week. It's hearty and full of fall color and flavor.

Pork Chops with Sweet Potatoes and Apples

4 (1/2 inch thick) butterflied boneless pork chops
1 C apple cider, divided
4 sweet potatoes, peeled and cut into 1/2 inch thick slices
2 green onions, chopped
2 T chopped fresh sage leaves
3/4 t salt
1/4 t pepper
2 large Rome or other cooking apples, sliced
1 t cornstarch

Brown pork chops on both sides in a large non-stick skillet. Remove chops and set aside.

Add 3/4 C apple cider, sweet potato, green onions, sage leaves, salt and pepper to skillet. Bring mixture to a boil, then cover and reduce heat. Simmer 10 minutes.

Add pork chops and apple, cover, simmer 10 to 15 minutes until sweet potato is tender and pork chops are done. Remove apple, sweet potato, and pork chops to serving platter.

Add to drippings in skillet 1/4 C apple cider and cornstarch. Stir until smooth, cooking over medium heat until mixture thickens and boils. Boil one minute, stirring constantly. Pour over pork chops.

Yum! I wish my hubby liked sweet potatoes, because I LOVE THEM. it borders on obsession, really. I do a dish like this just with pork chops, apples, cinnamon and butter. And he loves that, so it's all good. :)
